Meet Our Authors


Jennifer Chiplin
has over 17 years experience in the Australian hospitality industry, both in commercial and non commercial establishments including hospitals, restaurants and registered clubs.  Jennifer has worked in a range of employment positions from kitchen hand to senior management with a particular emphasis on Human Resource management.

Jennifer also has over 15 years experience as a professional trainer in both the public and corporate sectors.  Since 1990 Jennifer has been training hospitality workers in front line skills including food and beverage, gaming, customer service and job seeking skills.  She has also provided training in supervisory and management, such as leadership skills, human resource principles, conflict management and legislative requirements.

Jennifer's qualifications include a Diploma in Hotel/Motel Management, a Graduate Diploma in Communication Management, a Certificate IV in Workplace Training and Assessment, a Certificate IV in Workplace Safety and a Masters in Education (Human Resources).

Jeffery Puckeridge
(B.Ed) As manager of Hospitality Programs with TAFE NSW, Jeffery is responsible for curriculum development and statewide course implementation, regularly representing TAFE NSW on national projects.  Jeffery has extensive experience in the hospitality industry starting as a bar attendant, then in management with Hilton Hotels (U.K.) and a range of Sydney restaurants.  He is also co-author of The Professional Waiter and the Professional Bar Attendant.

Peter Howard (B.Ed) Formerly a Senior Lecturer at Ryde TAFE, Peter has had broad experience in the hospitality industry, beginning as a waiter before running his own restaurants.  Peter appears regularly on national radio and television, has written many cookbooks and contributes food and travel magazine articles.  He is also co-author of The Professional Waiter and the Professional Bar Attendant.

Clive Hartley
gained his hotel management qualificatons in the UK and also holds British Wine and Spirit Education Trust qualifications.  Clive's career spans over 20 years in Hospitality ranging from hotel food and beverage management experience to running  his own restaurant.  In addition to this he managed an award winning London wine bar and a wholesale wine warehouse.

Since joining TAFE in 1990 he has risen to Senior Head Teacher Food and Beverage, at the prestigious Northern Sydney Institute of TAFE, Ryde Campus.  Clive developed and co-ordinates the first accredited Sommeliers Course in Australia, (delivered in conjunction with the Australian Sommeliers Association NSW).
